| Le Macabeu donne naissance à des vins blancs secs puissants, raisonnablement aromatiques lorsqu'il est récolté au bon moment. Il est à la base des Côtes du Roussillon blanc mais peut aussi entrer dans la composition des Côtes du Roussillon rouge dans la limite de 10 % de l'encépagement. Dans le Roussillon, récolté très mûr, il est surtout adapté à la production de vins doux naturels ambrés. Implanté dans le Roussillon depuis fort longtemps, le Macabeu ou Maccabeo est un cépage d'origine catalane (certains affirment que son pays d'origine serait l'Asie mineure). Il est cultivé en Catalogne espagnole depuis des temps immémoriaux, en particulier dans la région de Villafranca-del-Pénèdes où il sert de base à l'élaboration de vins blancs (...) |
